Creamy Avocado Hummus

Uhhh, excuse me…I'd like a homemade hummus….hold the tahini. Said… no one ever! (dot...dot...dot) Except this girl who was too lazy to go to the store but was craving some hummus for her cucumber! I mean let's face it, who really has that nutty delicious condiment just laying around anyway? I know...I know...tahini adds that unique warm nutty flavor to hummus but, I figure it can be substituted!


So away I went searching my fridge for something that would give me the moisture and creaminess of a tahini….and there it was…the left over Greek Yogurt from my Saucy Minx Dipping Sauce. I've never made hummus before so why not start off unique and use what I have around the house. Hummus is really just a puree of different vegetables together anyway, right? Et Voila, I played with my food and 10 minutes later (not even really) I had yummy fresh Hummus packed with extra protein and other healthy things from the Greek Yogurt!


This hummus recipe is SO easy and can take on any flavor profile your taste buds desire! If you have a blender or food processor this can be whipped up in minutes and clean-up is simple. John even said that it tasted better than traditional hummus *GASP!* …I think it was because I added a TON of garlic (more than I put in the recipe below…It was a vampires nightmare!)


Alright! Let's get cookin' and spend some thyme together ya'll! Per the usual I included the basic ingredients you need for this recipe, the ingredients I used, and directions to follow along. If you modified something, then skip that step or replace the step with your own ingredient!

Avocado Hummus Ingredients

 

Tools:

Cutting Board

Knife

Blender OR Food Processor OR Potato Masher (…that might take a while….)


Keep It Simple | Just The Basics:

1 15oz Can Garbanzo or Chickpea Beans--drained

1 Lime or Lemon

1/4 Cup Tahini or Greek Yogurt

1/4 Cup Olive Oil

Salt

Pepper


Thyme For Mine | Make it With Me:

1 15oz Can Garbanzo or Chickpea Beans--drained

1 Avocado

1 Lime OR 2 TBSP Lime Juice mixed with 2TBSP cold water (b/c it is typically concentrated)

1/4-1/3 Cup Greek Yogurt

1/4 Cup Olive Oil (eyeballed)

2-3 Cloves Garlic

1 TSP Dried Thyme

Salt

Pepper


Direction Thyme:

1. Place everything in the food processor/blender except the thyme and olive oil

2. Begin blending everything together

3. Drizzle in the olive oil until smooth

4. Add Thyme & blend a little longer until you reach the consistency you prefer

5. Grab some veggies, parm chips, or anything dipable and ENJOY!
