Simply Delicious Ratatouille

So, I love Disney movies and have wanted to make this delicious recipe for AGES....Unfortunately, I was paralyzed by my fear of the unknown. Yes... that does happen! I fear cooking things I have never cooked before.

Then I pour myself a stiff drink, put on my big girl pants, and say... 'Well, what is the worst that can happen...your husband takes you out to dinner or you order pizza...'

The good news is that John didn't even consider taking me out to dinner with this one! It came out perfect the first time and is SO EASY TO MAKE!! It seems a bit time consuming but with a few prepped sauces, that honestly pull double or triple duty recipe wise, and a mandolin slicer...you are in buziness!!


The reward is completely worth the trouble! This dish is absolutely mouth watering and SO PRETTY...your family, friends & Instagram will thank you for making it!

Alright! Let's get cookin' and spend some thyme together ya'll! Per the usual I included the basic ingredients you need for this recipe, the ingredients I used, and directions to follow along. If you modified something, then skip that step or replace the step with your own ingredient!


 


Serves 4-8 (Depending on how much you make...I used a 1-1 ratio but had a fair amount of eggplant left over)


Keep It Simple | Just The Basics:

1 Eggplant Thinly Sliced & Cut in Half (like a Half Moon)

1-2 Zucchini Thinly Sliced

1-2 Yellow Squash Thinly Sliced

1-2 Bell Pepper Thinly Sliced

1-2 Cups Tomato Sauce

Olive Oil

Salt

Pepper


Thyme For Mine | Make it With Me:

1 Eggplant Thinly Sliced & Cut in Half (like a Half Moon)

1-2 Zucchini Thinly Sliced

1-2 Yellow Squash Thinly Sliced

1-2 Bell Pepper Thinly Sliced

1 Cup Scrumptious Pumpkin Béchamel Sauce (it's Gluten & Dairy free!!)

Olive Oil

Salt

Pepper


Direction Thyme:

1. Preheat Oven 350

2. Slice all vegetables evenly (I used a mandolin but if your food processor has a slice attachment that would work too)

3. Drizzle olive oil in bottom of oven safe dish (I used a well-seasoned cast iron pan)

4. Drop 1-2 cups Simple Pizza Sauce in pan and spread evenly

5. Drizzle Scrumptious Pumpkin Béchamel Sauce into pan (you can just drizzle back and forth I was trying to be fancy with my swirl... just go for an even distribution)

TIP: Make your sauces ahead for easy assembly!

6. Stack one of each vegetable

TIP: Get the kids involved! Let them help you make little stacks that you can then stack all together and place in the dish for quick assembly!

7. Place in baking dish slightly overlapping creating a circle, or in lines depending on the dish. If you used 2 of each vegetable then create a tighter layer to fit it all in or stand them upright in a smaller dish.

8. Drizzle olive oil over finished master piece

9. Sprinkle with thyme, salt, & pepper

10. Bake 45-60 minutes


Grab a nice white wine, and either egg noodles or a wild rice and ENJOY!


Have left over slices? Save them in an air tight container to make a quick stir fry dinner later in the week!
