Beet it! Beet it!.... All you have to do is Roast it!! lol Ok that doesn't quite work but here is something that will! Beets are fabulous because you can roast them and store them for days to use them in may different ways. Here is a great, and easy, way to roast and peal those beets!
1. Preheat oven to 400 degrees
2. Clean the beet really well
3. Place beet in it's own happy little tinfoil packet (doesn't have to be dry because water will help the process)
4. Add a little Olive Oil or H20 to the packet for moisture
5. Place on a baking pan
6. Put in the oven about 60-90 minutes depending on the size
8. Check with a fork to determine softness...should be firm enough to hold it's shape but soft enough to easily stab (like a potato!)
9. Let cool
10. Use a paper towel to remove the skin of the roasted beet. (this may take a little nail action but should slide off pretty easily)
11. Store in zip lock until you are ready to slice, dice, and or otherwise use the beet! :D
