Who doesn't love to get stuffed, eh? These Simply Stuffed Peppers are one of my favorite stuffed food recipes because it is easy, healthy, and packed full of flavor! Best part, you can make the stuffing ahead of time and have dinner ready in under 30 minutes! Here is one of my secrets...I have packs of this stuffing frozen. When I know it will be a long day, I pull one out in the morning and go about my day excited for the fresh home made meal I am going to come home to (whoop! whoop!).
Check out all the goodness that is in these peppers! OH--and I even learned how to make my own ground meat. Funny story here...I ended up forgetting to grab turkey at the store...and I had a few chicken breasts in a new marinade that needed to be cooked...so I made my own ground chicken breast!
Alright! Let's get cookin' and spend some thyme together ya'll! Per the usual I included the basic ingredients you need for this recipe, the ingredients I used, and directions to follow along. If you modified something, then skip that step or replace the step with your own ingredient!

Keep It Simple | Just The Basics:
1 lb Ground Meat
1 Md Onion Chopped
1 Carrot Chopped
1 Bell Pepper, or 3-4 Mini Peppers, Chopped
2-3 Cloves Garlic Chopped
6 Bell Peppers Halved
32 oz Can Stewed Or Kitchen Cut Tomatoes
Salt
Pepper
For Topping:
1/3-1/2 Cup Panko
Parsley Chopped
1/3-1/2 Cup Shredded Mozzarella
Pepper
Thyme For Mine | Make it With Me:
1 lb Ground Chicken Breast (Check out this Super Tip: Home Ground Meat
1 Md Onion Chopped
1 Carrot Chopped
2-3 Cloves Garlic Chopped
1 Bag Frozen, Shelled Edamame Thawed
1 Bell Pepper, or 3-4 Mini Peppers, Chopped
6 Bell Peppers Halved
Handful of Spinach (or Kale)
32 oz Can Stewed Or Kitchen Cut Tomatoes
Thyme
Dill
Salt
Pepper
Olive Oil
For Topping:
1/3-1/2 Cup Panko
Parsley Chopped
Shredded Mozzarella
Pepper
Thyme
Direction Thyme:
1. Preheat Oven to 400
2. Brown Ground Chicken on medium-high heat
3. Add salt & pepper as cooking
4. Reduce heat to medium/ medium-low
5. Add Onion & Garlic
6. Add a Thyme as cooking
7. Add Carrots & Chopped Peppers
8. Add Dill as cooking
9. Let cook a few minutes until carrots just start to soften
10. Add Tomatoes & allow to reduce
11. Add Spinach
12. Add Edamame
13. Remove from heat and allow to cool
14. Make topping: Combine Panko, Parsley, Shredded Mozzarella, Pepper, & Thyme
15. Drizzle Olive Oil in bottom of baking dish
16. Fill halved Bell Peppers with meat mixture
17. Place in baking dish
18. Top each with Panko topping
19. Bake 20-30 Minutes
TIP: Careful here, it's easy to burn the topping….*speaking for a friend*
