Butternut Squash & Potato Stew with Cabbage Steak

A fellow foodie, Amanda with A Simplified Kitchen, introduced me to meatless Monday recently. She explained that we use so much water just for one patty of beef and that reducing our meat intake for one day can have a significant impact on the worlds water reserve. So, I came up with this quick and easy slow cooker meal to hit the meatless parameters!


This dish is so easy! Seriously, it will knock your socks off how versatile and delicious!


Simply find veggies that need to be used up, throw them in vegetable broth, add herbs & spices, then set it and forget it until you are ready to eat! AWESOME SAUCE!

Alright! Let's get cookin' and spend some thyme together ya'll! Per the usual I included the basic ingredients you need for this recipe, the ingredients I used, and directions to follow along. If you modified something, then skip that step or replace the step with your own ingredient!


 

Butternut Squash & Potato Stew


Keep It Simple | Just The Basics:

2-3 Cups Cubed Butternut Squash

2-3 Cups Cubed Potatoes (I like Yukon Gold/Butter)

1/2 Cabbage Wedged

4-5 Cups Vegetable Broth

1 TSP Salt

2 TSP Pepper


Thyme For Mine | Make it With Me:

2-3 Cups Cubed Butternut Squash

2-3 Cups Cubed Potatoes (I like Yukon Gold/Butter)

2-3 Cups Cubed Carrots

1/2 Cabbage Wedged

4-5 Cups Vegetable Broth

1 Hearty Beer

1 TSP Thyme

1 TSP Smoked Paprika

2-4 Cloves minced Garlic OR 2 TBS Granulated Garlic

1/2 TSP Penzey's California Dreamin (Or mild spice)

1 Bay Leaf

1 TSP Salt

2 TSP Pepper


Direction Thyme:

1. Get the crock pot out

2. Cube all vegetables

3. Throw them in the crock pot

4. Add Liquids

5. Add Spices

6. Stir

7. Set to High (2-3 hrs) or Low (4-6 hrs)


30 Minutes before dinner….

1. Preheat Oven to 450

2. Line Baking Sheet with Parchment

3. Line up Wedged Cabbage Steaks

4. Drizzle with Olive Oil, Salt & Pepper

TIP: Add your favorite spice for a twist!

5. Flip & Repeat Step 4

6. Throw in Oven 10-15 minutes until browned on one side

7. Flip and back into the oven 10-15 minutes

8. Add to bowl & ladle yummy stew on top!


TIP: Add shredded cheese for extra deliciousness & Enjoy!!
