Alternative Beet...Hummus

Thyme for some Alternative Beet…Hummus! I love to listen to music while I play with my food so I was inspired to march to my own drum here. So, just like my original hummus recipe, I've subbed out some of the traditional ingredients in this recipe as well. Let's drop a beet on this one (get it!) and create a high impact, healthy, sweet delicious goodness! This comes out BEAUTIFUL in color, super creamy, and even the parents in 'Foot Loose' would get down with the beet on this recipe! Seriously though, I am OBSESSED! I may not go back to regular hummus….EVER!


Alright! Let's get cookin' and spend some thyme together ya'll! Per the usual I included the basic ingredients you need for this recipe, the ingredients I used, and directions to follow along. If you modified something, then skip that step or replace the step with your own ingredient!



Chickpeas, Garbanzo beans, greek yogurt, olive oil, thyme, salt, pepper, lime, garlic, tomato, cucumber
Beet Hummus Ingredients


Tools:

Cutting Board

Knife

Blender OR Food Processor OR Potato Masher (…that might take a while….)


Keep It Simple | Just The Basics:

2 Cans Garbanzo Beans (or freshly prepared)

1 Medium Ripe Avocado

3 Medium Roasted Beets (Super Tip: Roasted Beets!)

1/3 Cup Greek Yogurt

1/4 Cup Olive Oil

Salt

Pepper


Thyme For Mine | Make it With Me:

2 Cans Garbanzo Beans (or freshly prepared)

1 Medium Ripe Avocado

3 Medium Roasted Beets

2-3 Cloves Garlic (roasted or fresh)

1/3 Cup Greek Yogurt

1/4 Cup Olive Oil

1 Lime (you can zest and reserve it for baking then juice into the bowl)

Thyme

Salt

Pepper


Recipe Thyme:

1. Place everything in the food processor/blender except the thyme and olive oil

2. Begin blending everything together

3. Drizzle in the olive oil until smooth

4. Add Thyme & blend a little longer until you reach the consistency you prefer

5. Dish-out and Enjoy!

YES IT IS THAT SIMPLE!
