Lamb Stuffed Portobello Mushrooms

Thyme Until Dinner: 30 minutes


Who wants to look like they spent a ton of time in the kitchen but really only spent 20 minutes? This lamb stuffed mushroom recipe will have your mouth begging for more! It is so simple and easy to build plus it only takes 20-25 minutes in the oven to bake! You can easily make this in advance and toss it in the oven for a quick, hot, delicious meal! Pair it with a quick simple salad and voila you have the mushrooms with the meats! YUM!

You will notice a few unique ingredients in this recipe...like grated apple. This is because lamb can easily dry out--the apple and pepper adds nice flavor and moisture to the lamb. Bonus: it also adds some great nutrients to this dish that your family will thank you for later! lol











Alright! Let's get cookin' and spend some thyme together ya'll! Per the usual I included the basic ingredients you need for this recipe, the ingredients I used, and directions to follow along. If you modified something, then skip that step or replace the step with your own ingredient!


 


Keep It Simple | Just The Basics:

1 LB Ground Lamb

1/2 Medium Onion Finely Chopped

4 Cloves Garlic Minced

6 Medium Portobello Mushrooms OR 10-12 Portobello Sliders

1 Egg

1/3 Cup Panko Breadcrumbs (or Regular Breadcrumbs)

Olive Oil

Salt

Pepper


Thyme For Mine | Make it With Me:

1 LB Ground Lamb

4 Small Peppers (or 1 LG Bell Pepper) Finely Chopped

1/2 Medium Onion Finely Chopped

4 Cloves Garlic Minced

1 Shallot Finely Chopped

6 Medium Portobello Mushrooms OR 10-12 Portobello Sliders

1 Egg

1/3 Cup Panko Breadcrumbs

1 Small Apple Grated

1/3 Cup Crumbled Feta

1/4 Fresh Basil Chopped

Shredded Parmesan

Thyme

Salt

Pepper

Olive Oil


Direction Thyme:

1. Preheat Oven to 400 degrees

2. Prepare oven safe dish with a drizzle of olive oil

3. Prepare Mushrooms Follow this Super Tip for Mushroom prep!

Extra TIP: I take my meat & egg out during this step to let it warm up for easier mixing

4. Combine lamb, peppers, onion, garlic, shallot, panko, apple, feta, basil, thyme, salt, & pepper

5. Add egg to meat mixture & combine

6. Drizzle olive oil and thyme in the bottom of each mushroom cup (doesn't need a whole lot just a bit to get the cooking process going)

7. Fill each cup with the lamb mixture

TIP: I put a dollop at a time in and push it down a little to get into every crevice then I mound it on top like a meatball

8. Sprinkle each with shredded Parmesan

9. Bake 18-25 minutes until cheese begins to brown


Et Voila! Delicious Goodness that will be a crowd pleaser for sure!! (I even got one of my friend's picky boyfriend to like this dish...talk about awesomesauce!!)
